E-Z Gel is a gluten free, non-GMO cornstarch that can be directly added to any liquid, hot or cold, for instant thickness. E-Z Gel holds up to freezing, canning and refrigerating without weeping, thinning, or breaking down. E-Z Gel is resistant to lumping and adds no color or flavor of its own. It also has a companion cookbook.
E-Z Gel vs Thick Gel: While E-Z Gel and Thick Gel are similar in nature, indeed they are made from the same variety of waxy maize corn, there is one major difference. E-Z Gel is an instant thickener. This means it can be instantly whisked in to hot or cold liquids and will thicken immediately. Thick Gel is similar to a conventional corn starch. It must be mixed in a slurry and then brought to a boil to thicken. With E-Z Gel you have more convenience, but with Thick Gel you use half as much and still get the same amazing keeping qualities. We suggest having both on hand, but E-Z Gel is the faster kitchen go-to and Thick Gel our canning genius.

E-Z Gel Conversion Ratio
E-Z Gel replaces cornstarch, flour and tapioca in all thickening applications:
1 T. cornstarch = 2 T. E-Z Gel 2 T. flour or tapioca = 2 T. E-Z Gel
Add E-Z Gel gradually to hot or cold liquids, stirring until smooth. Allow to stand for 10 minutes for maximum thickness. Bottle, refrigerate or freeze finished products for future use.
