What is Erythritol?

A substance which occurs naturally in many fruits and vegetables now manufactured by fermentation of glucose. With a caloric value close to zero (max 0.2Kcal/g) with an appearance and properties very similar to sucrose but offering 70% of the sweetness of sucrose, it is an ideal choice for many applications.

Since the early 1990s, several of Azure’s vendors have been developing alternative natural sweeteners. Stevia is one of the most popular. However, while stevia is great if you just need a tiny dash of sweetness in your coffee, it’s hard to work with in baking.

Steviva combines stevia with other natural ingredients to develop alternative sweeteners that behave more like sugar when it comes to baking and cooking. There are three different ingredients that are the basis for their new products: erythritol, xylitol and monk fruit.

Monkfruit is the new kid on the block and is currently Steviva’s #1 selling product. But it’s not actually a fruit. It’s a nut from Asia that’s been used as a sweetener for hundreds of years. For MonkSweet Plus Steviva uses an extract from the sweetest part of the rind, which produces a very intense sweetener with a slightly fruity aftertaste. 

Another natural ingredient is Erythritol, which has been used in Japan since 1990 in candies, chocolate, yogurt, fillings, jellies, jams and beverages. Erythritol is classified as a sugar alcohol, also called polyols, which occur naturally in many plants. In this case, fermented, non-GMO corn from France. Erythritol is unique among the sugar alcohols, and is easier on stomach than sorbitol.

Finally, Steviva introduces Xerosweet Plus with Xylitol, which is another sugar alcohol. The flavor profile of Xerosweet+ Stevia Fortified Xylitol is neutral enough for a variety of uses, yet it pairs especially well with mint or citrus flavors.
