Since the early 1990s, several of Azure’s vendors have been developing alternative natural sweeteners. Stevia is one of the most popular. However, while stevia is great if you just need a tiny dash of sweetness in your coffee, it’s hard to work with in baking.

Steviva combines stevia with other natural ingredients to develop alternative sweeteners that behave more like sugar when it comes to baking and cooking. There are three different ingredients that are the basis for their new products: erythritol, xylitol and monk fruit.

Monkfruit is the new kid on the block and is currently Steviva’s #1 selling product. But it’s not actually a fruit. It’s a nut from Asia that’s been used as a sweetener for hundreds of years. For MonkSweet Plus Steviva uses an extract from the sweetest part of the rind, which produces a very intense sweetener with a slightly fruity aftertaste. 

Another natural ingredient is Erythritol, which has been used in Japan since 1990 in candies, chocolate, yogurt, fillings, jellies, jams and beverages.
